Responsible for sushi menu creation & production. Cut & filet raw fish & other seafood items & store them. Prepare & ensure quality, portion size, and presentation of sushi dishes. Monitor inventory & order supplies. Req. 1 yr exp as Asst Sushi Chef. Able to cut whole salmon & tuna for sushi. Knowledge of sushi knives maintenance.
